Tempting Lunch Recipes for Your Kids Lunch Box!

Coming up with good lunch recipes and making lunches has always been a bit of a drag for me. And eating some of the lunches I used to get was even worse (if you’re reading this mum, you know I never was keen on regular sandwiches but loved your bits of salad’s you made me!).

However these lunch ideas I found are fantastic!

The key to keeping lunch recipes as delicious as when you first made them is storing them in insulated lunch bags. And making sure they are in a good sturdy lunch box inside that bag so they don’t get crushed.

There was no way I was going to eat a lunch that was warm or flattened. You can get lunch bags that allow you to put an ice cube in a pocket at the bottom (so they don’t make stuff inside the bag soggy as it melts). This way you can give your children things like chicken or yoghurt without fear of poisoning them by the time they eat it!

HINT: If there are complaints that bread is soggy by the time it is eaten, reduce the amount of liquid that is used in making fillings and use bread rolls instead as they are thicker.


MONDAY

Teriyaki Chicken Sandwich (fry small chicken pieces, crushed garlic, ginger and onion in a pan till brown, add capsicum and Teriyaki marinade. Allow to cool and put on slices of bread)

Cup of sliced orange

Handful of almonds

Yoghurt and fruit Muesli bar


TUESDAY

Tuna Salad Sandwich (tin of tuna in springwater drained, mixed with sliced celery, sliced shallots, pepper and mayonnaise. Spread out on slices of bread)

Cup of sliced peaches

Small container of fruit yoghurt


WEDNESDAY

A new lunch box idea…

Roast Pumpkin and Spinach pie (bake diced pumpkin on a baking tray, spray with cooking spray and bake for 25 min. Meanwhile make pastry by combining ¾ cup plain flour with ¼ cup self raising flour. Melt 2 Tb margarine and add to 1 ½ Tb skim milk. Beat in 1 egg white and fold into flour mixture. Roll out to fit a 23cm pie plate that has been coated with cooking spray.

To make filling, sauté 1 onion, 1 tsp garlic for 1 min. Add in 1 bunch of English spinach roughly chopped and toss till spinach softened. In a separate bowl beat up 2 whole eggs plus 2 egg whites using electric beater for 1 min. Add 1 ½ cups skim milk, 2 Tb grated parmesan cheese 2 tsp vegetable stock powder and beat well. Spoon spinach mixture over pastry base and sprinkle roasted pumpkin on top.

Pour egg mix over vegetables, sprinkle with grated tasty cheese and bake 40 min or until cooked in centre and browned. Cool in fridge overnight and serve for lunches the next day. Or make enough for dinner and the kids lunch box!)

THURSDAY

FRIDAY

Bread roll with bacon, lettuce, tomato and cheese slice. Mix a little tomato sauce and mayo for a burger flavoured sauce. Or Barbeque sauce depending on taste.

Your basic recipe for a healthy lunch box for kids or adults is a serve of fruit and something more filling for morning tea. Things like muesli bars and baked muffin bars are good. Then a variety of meals over the week for your lunch.

I could never cope with a sandwich every day but you can make the sandwich the regular item with interesting fillings. Have a surprise change in the middle of the week like a quiche or spinach and Roasted pumpkin pie. Then add a little snack for after your lunch like some dried fruit and nut mix or yoghurt. Fruit in jelly works well too.

Lunch Recipes need to be creative but don’t have to be too difficult if you plan in advance for them like you do your evening meals. And if you make enough for everyone for lunch, including yourself and the children that are still home with you, there is less for you to do when it comes to lunch time. Just eat the healthy lunch recipes and then put the kids to bed!
